Dice 1 large Sweet Potato and 1 large onion. Melt butter in pan on medium heat and add sweet potato and onion cook for 8-10 minutes. Pre heat oven to medium heat.
Add 150g of baby spinach and cover for 30 seconds then remove lid and stir until wilted.
Whisk 7 eggs and1/3 cup of creme fraiche until combined.
Add 100g of blue cheese to fry pan till slightly melted.
Put all ingredients including egg mixture in to a oven proof pie dish and add grated cheese on top for extra naughtiness. Cook for 30 minutes at medium heat.
