Pumpkin Salad

As a lover of pumpkin I am always on the look out for new recipies and my friend gave me this little beauty, so easy and really yummy.




1/4 pumpkin
olive oil
1 x onion
1x can of lentils
2x tablespoons of balsamic vinegar
lettuce
parmesan

Preheat oven to 200c and put in your roughly chopped pumpkin, cook until tender.
while pumpkin is cooking add oil to fry pan and add onion and cook for 5 minutes or until soft. Add lentils and 1 tablespoon of balsamic vinegar. Shake pan gently to combine.
Combine lentil mixture, pumpkin and rocket in a salad bowl. Then whisk together 1 tablespoon of balsamic and 1 tablespoon of olive oil and drizzle over the top and then top with parmesan.

If anyone has any other yummy pumpkin meals please let me know, I am addicted to them.

This does sound delicious, I never really eat pumpkin apart from in soups but i should really try something similar.
